This holiday season, I got the pleasure of trying this new restaurant’s six course Prix Fixe menu at their soft opening. They should be opening their doors this month, and let me tell you, it is amazing. Every dish is very well thought out, from the aroma you experience at first bite, to the taste that ignites in your mouth with each plate. Definitely worth it!

We started off with the Smokey Cheese Wafflato. Perfectly crispy on the outside with just the right amount of chewiness on the inside. Everything about this dish was bursting with flavor.

Next we had the Croqueta De Maitake. Perfectly bite size and equally delicious. This dish came on a Pagu branded wooden board which I thought was a very nice touch. 

To round out our meal, we followed with the Avocado Ikura Pintxo (minus the toothpick), Braised Pork Belly Bao, and Guchi's Midnight Ramen. All three were good, but not amazing. The Avocado Ikura Pintxo was a little flavorless, the pork belly could have been more tender, there was no melt in your mouth effect, and Guchi's Midnight Ramen didn't have enough Umami wow-factor flavor. Every time I eat ramen, I look for that feeling at first bite that warms you to your core and gives you a sense of home and belonging, this dish was lacking that.

Last but not least, we ended our experience with the Chocolate Mousse Cake with a pairing of Sparkling Sake. This was all rich, smooth, and refreshing. A perfect way to end the night! 

I give Pagu a 4 out of 5. I would definitely go back, but there are improvements that can really make this place even more outstanding.
